My tip is to let the men do the grilling! There is something so primitive about a man, meat, and fire--and they love it! So when my man is happy I am happy.

We use Smoking Chips. They give grilled beef and poultry a great flavor unlike just grilling with only the charcoal. There are many varieties of wood chips or chunks: hickory, mesquite, or pecan are our favorite. We soak a handful of chips in a bowl of water. Once charcoal is ready, we drain the chips and toss evenly over the fire. Soaking the chips prevents them from burning up too fast.

We love this marinade:

Rockin' Marinade

1/4 cup soy sauce
3T red wine vinegar
2T lemon juice
2T olive oil
3/4 t dried italian seasoning (I don't use)
1 clove garlic, crushed
1/4 t onion powder
pinch black pepper
1/4 cup italian dressing (I used fat free)

Mix together and marinate meat of choice for at least three hours. Grill as you normally would.

For an easy dessert on grill nights, brush watered down honey on fruit (sliced in half) and grill it. Our favorites are peaches and pineapple.

I LOVE Mrs. Rachel's tip! LOL Let the men do the grilling!

Hubby and I are fairly new to the grilling thing (other than hotdogs and the occasional burger) but we are really seeking recipes to give our grill a workout this summer!

Tonight, I took country style pork ribs and seasoned them and put a bit of bbq sauce on them. I filled the bottom of my broiler pan about 1/2 with apple juice ..set the rack on and covered the whole thing with aluminum foil. Then I baked them at 300 for 3 hours - do not peek! Then we fired up the grill and grilled the ribs using a mixture of bbq sauce, honey, and brown sugar. Grilled just a few minutes on each side and WOW! Tender and flavorful!

I got this recipe from another blogger (Mommy's Kitchen) and all I can say is ... Mmmmmm! The tip would be to slow bake the ribs first, before bbq-ing.

I marinate fish (like yellowtail or bluefin tuna) in Italian dressing (Bernstein's Restaurant Recipe is my favorite). I put the fish in marinade the night before and turn it once in the morning. Then I grill it for dinner, taking care not to overcook it - take it off the grill while it is still opaque in the center. Yum!

We are a total hunting family, and always have wild game in the freezer. The best appetizer, to me at least, is teal! Here is my recipe-
Cut duck breasts in bite size portions. Roll them in tony's seasoning. Wrap the breasts in bacon, along with cream cheese and jalapenos. Grill for about 20 minutes on low, turning constantly. - Awesome- our friends and family always want us to make this recipe!

When I buy chicken breasts I cut it into strips, sprinkle it with meat tenderizer and cover it in marinade...then I freeze it until it's ready to use. It seems like it marinades so much better tahn just leaving it for a few hours or overnight.
